How to make egg and mushroom muffins + ADD Goodness

Over the last few weeks, I’ve been on a journey with Denny Mushrooms to spread the word on their mission to #AddGoodness to many South Africans, who have been hit hard by our pandemic and struggling to afford meals.

In my first post, I mentioned that I would share my favorite way to prepare mushrooms and mine is by making egg and mushroom muffins! Mushrooms are such a dynamic source of nutrients and can be paired with almost any meal, at any time of the day!

Egg and Mushrooms muffins are quick and tasty way to prepare a treat for breakfast or healthy snacks that can be warmed up on-the-go. In addition, if your children are fussy eaters like mine, you can “hide” nutrient-packed ingredients in them, without them noticing and they can always be kept in the refrigerator until you need them.

How to make egg and mushroom muffins:



Ingredients:

  • 1 bowl of mushrooms (I used Denny baby-button mushrooms)
  • 6 Eggs
  • Quater diced onion
  • Garlic
  • Diced bacon/macon/mince
  • Tomato
  • Salt
  • Pepper
  • Pesto


If you prefer different ingredients, these would also work with spinach, cheese and peppers.

Method:

  • Preheat your oven to 180 degrees
  • Fry your bacon in a little bit of olive oil
  • In a large bowl, whisk your your eggs. Then add your onion, salt and pepper
  • Spray your muffin pan with a non-stick oil spray
  • Add your egg mixture 3/4 of the way, then add your: mushrooms, bacon, garlic and tomato.
  • Pop into the oven for 15 minutes
  • Enjoy with toast, avocado and pesto
  • If you want to store them to eat at a later stage, keep them in an airtight container.
