All eyes were on the Royal Wedding last weekend and what a beautiful celebration it was! I still have to catch up on the full ceremony, but I caught some amazing highlights – I loved the authenticity and representation of the royal couple’s cultures.
All the excitement around the wedding has inspired us to put together yet another Royal Baking Powder recipe. We created delicious banana and nutella muffins, because we’re an ever-so-slightly banana-obsessed family. I mentioned in my first recipe that I really want to improve my baking skills, so I called upon the help of the super talented mommy behind KST Cakes who let Khumo and I invade her kitchen to create this simple recipe with a twist.
2 medium ripe bananas, mashed
2 teaspoons Royal Baking Power
2 cups flour
½ cup brown sugar
1-teaspoon ground cinnamon
2 teaspoons vanilla extract
1 large egg
½ cup milk
¼ vegetable oil
Preheat oven to 180 degrees
Combine your flour, sugar, Royal baking powder, salt and cinnamon in a medium bowl and set aside.
In a large bowl, beat your egg. Add milk, oil, vanilla and mashed bananas (its best to use ripe bananas). Mix ingredients until well combined then whisk the dry indigents from your medium bowl, until there are no lumps.
Line muffin pan with liners and divide your batter evenly in the muffin pan, filling them about ¾ full.
Pour your Nutella in a bowl and melt in the microwave for 10-20 seconds. Add a teaspoon of Nutella to the top of each muffin and use a butter knife/toothpick to create your swirl.
Bake for 15-20 minutes until golden brown
Add your cream cheese if you would like and serve warm
